Alligator & Grits
If you love shrimp and grits, you'll love alligator and grits! This one features alligator sausage and a citrus butter sauce.
Grits:
Follow the directions on the package, but use chicken stock instead of water, following the instructions for desired serving size. I made 4 servings with 1 cup grits, 4 cups chicken stock, Magic Swamp Dust.
I added 2 cups shredded Gouda cheese at the end.
Alligator:
olive oil
1 pkg alligator meat (12 to 16 oz)
1 pkg alligator sausage (12 to 16 oz)
Magic Swamp Dust seasoning
1 stick butter
1 orange, juice and zest
Cut the alligator and sausage into bite size pieces. In a skillet, heat 1 tbs olive oil over medium high heat. Brown the alligator and sausage, seasoning with the Magic Swamp Dust. When they're cooked (about 2-3 minutes per side), lower heat to a simmer and add butter. Let the butter melt gently, squeeze in the orange juice, add orange zest. Stir gently to combine, don't let it get too hot or the butter will break. When it's incorporated, it's ready to serve over your cheesy grits.
