Almond Butter Pesto
This is one of those that you'll have to experiment with. Your ingredients are basil leaves, almond butter, olive oil, and parmesan cheese. Combine them in a food processor, adding enough olive oil to keep the pesto from being too clumpy.
2 c basil leaves
1/4 c almond butter
1/4 c grated parmesan
1/2 cup extra-virgin olive oil
salt & pepper to taste
Caprese salad:
Sliced tomatoes, fresh mozzarella, basil leaves, salt/pepper
