Andouille Pasta Salad
This is Sean Turner's recipe.

1 pkg rotini pasta
1 link andouille, diced
1 pkg ranch dressing mix
1 cup mayo
1 cup sour cream
2 tbs Magic Swamp Dust cajun seasoning
1 creole tomato, chopped
1/4 cup parmesan cheese
optional: up to 1/2 cup milk to "loosen" the dressing if it is refrigerated overnight
garnish: chopped parsley or green onions

Boil pasta in salted water until al dente. While it's cooking, brown the diced andouille in a skillet. Don't add oil to the pan - just brown over medium heat until it resembles large bacon bits.

Reserve 1/4 cup of the pasta water, drain pasta. Put the pasta and reserved pasta water in a large bowl. Let cool while making the dressing. Dressing: mix mayo, sour cream, ranch dressing mix, and Swamp Dust together well.

Stir the dressing into the cooled pasta, add the tomatoes, parmesan cheese, and browned andouille bits. Top with whatever garnish you prefer.
