Bacon wrapped dove
There isn't much to this recipe. Experiment as you will!
Italian dressing
dove breasts, deboned
jalapeno peppers
brick of cream cheese, cut in chunks
thin sliced bacon
cajun seasoning
Marinate dove breasts in Italian dressing overnight. Slice jalapenos in half, lenthwise, removing stems, seeds and membranes. Remove breasts from marinade and gently pound flat with a meat mallet. On a flat surface, lay one strip of bacon. Place one breast on top. Then place one jalapeno half, cavity up. Place a chunk of cream cheese in jalapeno cavity. Lay another dove breast on top of cream cheese. Wrap everything snugly with bacon strip. Secure with toothpicks.
Grill over medium high heat until bacon is cooked. Baste with barbecue sauce if you wish. When bacon is done, the bundle is cooked.
