BBQ Grilled Shrimp
This is Paul Salvant's recipe. He puts the shrimp in little wells on an oyster grilling platter, but you can use a heavy duty muffin tin or tin foil packets.
BBQ Sauce Recipe:
1 stick butter
1/2 cup Jack Miller's BBQ sauce
1 tbs worcestershire sauce
1 - 2 tbs Italian dressing
In a small skillet, melt the butter, then stir in the rest of the ingredients. Let simmer on low heat while you get your shrimp ready.
Shrimp:
2 pounds peeled large shrimp
Magic Swamp Dust cajun seasoning
1 jar banana pepper slices
parmesan cheese
sliced green onions
Lay peeled shrimp in the wells, 2 per well, or toss them into a tin foil packet. Top with banana pepper slices, season with cajun seasoning. Drizzle with the homemade bbq sauce. On a grill at medium heat, set the platter or packet on the grate. Close the grill. Don't walk away! This can burn quickly! Let them cook for a few minutes. When the shrimp are pink and the sauce is bubbly, it's done. Top with the parmesan cheese and green onion slices. Serve immediately with crusty french bread.
