Boudin Balls
This can be made with regular pork or crawfish boudin links. You can find Magic Swamp Dust cajun seasoning in many grocery stores, check out product locations at

1/2 cup flour
2 beaten eggs
1 cup panko crumbs
Magic Swamp Dust cajun seasoning
oil for frying

Heat the oil to 350. Cut the case off the boudin and discard. Cut the link into 1 inch pieces. Have 3 separate bowls for the flour, eggs, and bread crumbs. Season the flour and crumbs with Magic Swamp Dust. Roll each boudin piece in the flour, then eggs, then roll in the bread crumbs, shaking off excess. Fry several at a time, until golden brown. Drain on paper towels. Serve with remoulade dip.
