Buffalo alligator bites
This is how they do it at Val's Marina in Maurepas.
1/2 pound alligator tail meat in chunks
hot oil for frying
prepared buffalo wing sauce (commercial sauce or melted butter + hot sauce)
Season the alligator meat with salt/pepper/hot sauce to taste. Double batter it by dredging in flour, dipping in egg wash, then dredge in flour again, shaking off excess each time. Fry at 350 until golden brown (just a few minutes). Drain on paper towels. Put fried alligator in a bowl and coat with prepared buffalo wing sauce. Serve with ranch or blue cheese dressing.
