Bug Man's Pastalaya
This is The Bug Man, Paul Salvant's recipe.

6-7 lbs of pork , cubed (trim off fat)
32 oz. rotini noodles
2lbs smoked sausage
1-12inch link of andouille sausage, chopped into small cubes
2 cans of cream of mushroom soup
2 cans of Rotel tomatoes
2 packs of dry onion soup mix
1/3 bottle of Dale’s seasoning
1/3 bottle worcestershire sauce
2 yellow onions chopped
2 bell peppers chopped
Whole head of garlic chopped
1 pack of celery chopped
10 cups of chicken broth
2 cups of water
1 bunch of green onions chopped
1 basket of sliced mushrooms
Cooking Oil

Cooking Instructions:
•     Brown all meat in oil. When browned, remove from pot
•     Add additional oil to pot. Saute all vegetables except green onions and mushrooms. Stir constantly to avoid sticking
•     Add all liquid to pot with vegetables. Bring mixture to a boil.
•     Add meat and all other ingredients except green onions and pasta to pot. Cook for 1 hour on a low fire
•     Add pasta and green onions. Stir constantly. Cook for about 20 minutes or until pasta is cooked.
•     Serves 20-30 people
