Bug Man's Shrimp Jambalaya
This recipe goes with the Cortana Kiwanis jambalaya mix. This much needs a 5 qt dutch oven type pot. For ordering info, call The Bug Man, (225) 923-2847.
1 can Rotel tomatoes
1 lb smoked sausage, sliced
1 cup chopped creole veggie blend (onions, peppers, celery)
1 lb small shrimp, peeled
1 tub Cortana Kiwanis jambalaya mix, with liquid (stock/water) according to directions
sliced green onions for garnish
In a dutch oven or large pot, add tomatoes, sausage, and veggie blend. Saute over medium heat until veggies are wilted. Add shrimp, stir. Add mix and liquid, according to directions. Bring to a boil, then cover and simmer on low for 30 minutes.
