Camp fish- tropical glaze
Super easy! This works in the oven or on the grill and would be great with chicken breasts, too!
1/2 cup pepper jelly (I like Pepperland Farms' Mango Habanero)
juice of 1/2 lemon
1-2 tsp ginger paste (from the produce section)
2 tbs honey (preferably local, raw honey)
2 fish fillets (white fish, like catfish, trout, tilapia)
salt/pepper
In a bowl, combine jelly, juice, ginger and honey. Lay each fillet on a piece of foil. Salt/pepper the fillets. Brush glaze over the fillet. Close the foil and cook at about 400 degrees until the fish is flaky. Cooking times vary depending on thickness of fish.
