Camp White Beans
So easy for the camp!
1 lb smoked sausage, sliced
1 cup chopped creole veggies (+ garlic)
1 can Rotel tomatoes, drained
1/4 cup chopped green onions (optional)
1 can Great Northern or Cannellini beans, drained
1 large can cream style white beans
In a deep skillet, render sausage over medium heat. When there's a tablespoon of fat in the bottom of the skillet, add veggies and saute for 2 minutes. Add Rotel and green onions, saute until liquid is evaporated. Add beans and cook over medium heat, just until beans are thoroughly heated and incorporated with all ingredients. Serve as a main dish with rice or as a side with wild game.
