1 cup sugar
1 cup brown sugar (light or dark)
1/2 cup heavy cream
1 tsp vanilla
2 tbs butter
2 cups pecans
powdered sugar and cinnamon for dusting (optional, but very good!)
Combine sugars and cream in a heavy bottomed pot on medium high heat. Stir until it reaches 238 degrees. Add in vanilla, butter and pecans and incorporate until sugar starts to really coat the pecans and butter is completely melted and stirred into the mixture.
Remove from heat and pour into a thin layer on waxed paper. Don't let the melted sugar run away from the pecans - make sure you scrape it back onto the pecans before it sets. The candy will begin to set quickly. Dust with powdered sugar and cinnamon if desired. Using a rubber spatula, break up the layer to separate pecans and dust with a little more sugar/cinnamon if you want an extra coating.
