Chocolate Cayenne Cookies
This is Sue McDonald's recipe.
1 1/2 cups sifted flour
3/4 cup unsweetened cocoa powder
1/4 tsp salt
1/8 tsp cayenne pepper
3/4 tsp cinnamon
1 cup sugar
6 oz unsalted butter
1 1/2 tsp vanilla extract
1 large egg
optional: red & white sugar sprinkles
In a large bowl, combine flour, cocoa, salt, pepper, cinnamon. In a mixer or food processor, add sugar, butter, vanilla and egg. Combine thoroughly. Add dry ingredients and combine. The dough will be a bit crumbly.
On a large piece of plastic wrap, lay out 1/2 of dough to make a log. Do the same with the remaining dough. Wrap the logs tightly and freeze for about 10 minutes (or keep until ready to slice and bake). Slice into rounds. Lay slices on a baking sheet lined with parchment paper. Top with sugar sprinkles if desired.
Bake at 350 degrees for 10 - 12 minutes. Goes great with coffee!
