Cornbread
When Jimmy Babin, CreativeCajunCooking.com, makes cornbread for dressing, he makes a quadruple batch of Quaker Cornmeal's recipe. He uses half for shrimp dressing, half for oyster dressing. This is the SINGLE batch recipe. Double (or quadruple) as necessary.
1 1/4 c flour
3/4 c cornmeal
1/4 c sugar
2 tsp baking powder
1 c skim milk
1/4 c oil
1 egg, beaten
Heat oven to 400. Grease an 8-9 inch pan. Mix dry ingredients. In a separate bowl, mix the wet ingredients. Blend together with a mixer until smooth and no dry spots. Pour batter into prepared pan. Bake 20-25 minutes or until a toothpick inserted in the center comes out dry.
Shrimp Cornbread Dressing:
double batch Quaker cornbread (see above)
1 c water
1-2 tsp Kitchen Bouquet
1 tbs worcestershire sauce
2 tbs barbecue sauce
2 tsp dry Seafood boil seasoning
2 tbs Magic Swamp Dust cajun seasoning
1 or 2 lbs peeled shrimp (depending on how much you like the people you're cooking for ;)
Heat oven to 350. Grease a large casserole dish or deep baking pan. In a large bowl, break up the double batch of cornbread into small crumbles. In a separate bowl, mix all the ingredients (except shrimp). Pour into cornbread, mixing well, leaving no dry spots. Add water as necessary. Fold the shrimp into the mixture. Put in the greased casserole dish and bake at 350 for about 25 - 30 minutes.
Oyster Cornbread Dressing:
double batch Quaker cornbread (see above)
1 c oyster liquid from container of oysters
1-2 tsp Kitchen Bouquet
1 tbs worcestershire sauce
2 tbs barbecue sauce
2 tsp dry Seafood boil seasoning
2 tbs Magic Swamp Dust cajun seasoning
1 pint or 1 quart oysters (depending on how much you like the people you're cooking for ;)
