Crab & Shrimp Mole
This recipe comes from Cajun Fishing Adventures. Ms. Lupita does not really measure anything, so quantities are approximate. I've included the video so you can see how she does it. Sweet and spicy - so good!

1 small onion, diced
olive oil
1 dozen small crabs, cleaned

Tomato puree: (to make enough to almost fill a margarine tub)
several fresh tomatoes (cored, peel if desired), 1 tbsp fresh garlic, 1 cup water, 2 tsp salt. Blend until smooth

2 lbs peeled shrimp

Mole sauce:
1/2 jar Don Maria mole base
1/2 jar chipotle peppers
1/2 cup honey
1/2 cup water
6 or so Club crackers to thicken
Blend all ingredients until smooth. Adjust quantities for taste.

In a large Magnalite style pot, saute the onions in olive oil until soft. Add the crabs and stir them around. Stir in the blended tomato puree. Cover and simmer for 20 minutes. Lupita sautes the shrimp in a skillet on the side. You can cook them right in the pot if you prefer - just until barely pink. Add the blended mole. Stir everything together. It will thicken as it simmers. Taste for seasoning. Serve with almost anything - rice, pasta, potatoes, or nothing at all! Sweet and spicy!
