Crab toast
You can double this recipe for a party.

1 cup mayo (lowfat is okay)
1 cup finely shredded white cheese (I like farmer's cheese)
1/2 roasted bell pepper, diced
cajun seasoning
1 cup lumb crabmeat, picked over for cartilage
2 large pistolettes or 1 small po-boy bread, sliced in thin rounds
sliced green onions

In a bowl, combine mayo, cheese, roasted bell pepper and cajun seasoning (add hot sauce if you want). Fold in crabmeat carefully. Top the bread rounds with the crab mixture, top with sliced green onions. Place on a baking sheet under a broiler until golden brown and bubbly. Serve immediately.
