Crispy Baked Snapper
One of the easiest recipes for fish! Works with any white meat fish.

Snapper fillets, cleaned, trimmed, bloodlines removed

1/2 cup mayo
1/4 cup parmesan cheese
1 tbs Magic Swamp Dust

plain panko crumbs

Heat the oven to 350. Mix the mayo, cheese, and seasoning. Brush over the snapper fillets, coating both sides. Dredge in the seasoned panko crumbs. Place on a rack on top of a baking sheet (or use a foil broiler pan in place of a rack, so that the crumbs on the bottom stay crispy too). Bake until fish is done, usually about 30 minutes, depending on how thick the fish is. You can also pan fry these in a skillet with a little olive oil, instead of baking in the oven.
