Cucumber Yogurt Dip
This is best made the day before.

1 cucumber
1 cup Greek style yogurt (see note)
1 tsp lemon juice
1 tbsp garlic
1 tsp hot pepper paste or flakes (optional)
1 tbsp chopped mint
1 tbsp chopped dill or oregano (your choice)
cajun seasoning or salt/pepper to taste

NOTE: sometimes, Greek yogurt is hard to find. To make your own, use regular plain yogurt. Line a sieve with a coffee filter and set it over a bowl. Add the yogurt to the coffee filter and let drain overnight. It will thicken for you. The lowfat or nonfat yogurts will still be a little liquidy.

Peel and seed the cucumber and dice. Lay the diced cucumber on paper towels and press out the liquid. Mix everything in a bowl and let sit at least 2 hours, better overnight.
