Dirty Rice for a crowd
This is Jimmy Babin's recipe, that will feed around 80 -100 people as a side dish. He cooks it in a large, jambalaya style cast iron pot. Find Jimmy's Smokin' Fryin' Rub and Magic Swamp Dust at www.CreativeCajunCooking.com

5 lbs onions, chopped
1-2 lbs chicken giblets, cooked and pureed
6 lbs ground sausage (he uses Jimmy Dean regular)
1/4 c Smokin' Fryin' Rub
1 1/3 c Magic Swamp Dust
1 c worcestershire sauce
2 c bbq sauce
Kitchen Bouquet as needed
8 qts water
8 lbs rice
veggie blend: 12 bell peppers (red, yellow, orange), 1 head celery, chopped

In a large cast iron pot, add everything up to the water into the pot. Cook over medium heat until sausage is browned. Add water. Bring to a boil. Add rice. Bring back to a boil, then lower heat to a simmer, and cover with the lid. Simmer on low heat for 25 minutes. Lift the lid (letting steam/water on the lid drain away from the pot), and stir gently. Add the veggies, incorporating them into the rice mixture. Turn off the fire, but keep warm until ready to serve.
