Egg Rolls
I love making egg rolls with leftovers. Here's some ideas for using shrimp boil leftovers and steak night leftovers.
NOTE: When I add the cream cheese, I put it in a zip-top bag with a tiny corner cutout. It helps to control it. You can just put a little blob if you want, it all melts anyway.

Shrimp, Andouille & Corn Egg Rolls
Shrimp, Andouille & Corn from a shrimp boil
Egg roll wrappers
water
cream cheese, softened (you can use the low-fat or flavored varieties)
sliced green onions
oil for frying

Cut the corn from the cob, peel the shrimp, dice the andouille.
Heat the oil to 350.
Assemble the egg rolls according to the instructions on the egg roll wrapper package. I use water to seal the edges, but you can use beaten egg - you'll have to brush it around the edges. I'd give you quantities, but it seems like some wrapper brands are bigger/smaller than others - so go with their directions.
Fill the wrappers with a little of each ingredient, then roll them up.
Fry at 350 until golden brown, drain on paper towels, serve with tartar sauce.

(My homemade tartar sauce: 1 cup mayo, 1 tbs lemon or lime juice, 1/2 cup plain yogurt or sour cream, Magic Swamp Dust, 1/2 cup chopped Justin Wilson's Wicked Cajun Pickles, 1 tbs Capt. Rodney's Boucan Glaze)


Philly Cheesesteak Egg Rolls
Grilled steak, sliced thinly into bite size pieces
sauteed onion and bell pepper
cream cheese, softened (you can use the low-fat or flavored varieties OR Cheez Whiz to be authentic)
blue cheese, crumbled (optional)
egg roll wrappers
water
oil for frying

Heat the oil to 350.
