1 english muffin
1 tsp butter, melted
1 center slice country ham, cut into small pieces
1/2 cup cheez whiz
1 tbs milk
Heat a nonstick skillet on medium heat. Butter the cut sides of the muffin and lay buttered side down in skillet to toast lightly. Remove muffin from pan and spray pan with nonstick cooking spray. Crack the eggs into the pan and fry as desired. (For over-easy, gently flip the eggs over when the whites turn opaque.) Add ham to pan.
When eggs and ham are done, place ham on each muffin, top with an egg, season with a little cajun seasoning. Add milk to cheez whiz and microwave for about 20 seconds, stirring well. Drizzle each egg with cheese mixture and top with jalapenos, if desired.
