Fried Green Tomatoes
Perfect for Fried Green Tomato BLTs! Fix 'em however you want, but this way sure is good! Just in case you don't know, green tomatoes are tomatoes that haven't ripened yet. Hard to find in stores, but easy to grow in a pot on the patio! We use Creole tomatoes here. Find Gator Wing Batter and Magic Swamp Dust at www.CreativeCajunCooking.com

Fried Green Tomatoes:
4 green (unripe) tomatoes
1 egg
1/2 can evaporated milk
1/2 bag Gator Wing Batter
oil for frying

Heat oil to 350. Wash and slice green tomatoes. In a bowl, whisk together the egg and milk to make an egg wash. In a separate bowl, add the Gator Wing Batter. Dip each tomato slice in the egg wash, then dredge in the dry batter. Lay in a frying basket in a single layer, battered slices not touching. Fry in small batches until golden brown (about 2 minutes). Drain on paper towels. Dip straight into the basil mayo or put on sandwiches. Either way, eat them while they're hot!


Basil Mayo:
1/2 cup fresh basil leaves
1 cup Miracle Whip
2 tsp Magic Swamp Dust seasoning (original, not Fire Dept. Spicy)
1 tbs sour cream (optional)

In a food processor, blend all the ingredients. The sour cream is optional to make it more of a dip. You can omit if you're using for sandwiches.


Swamp Bacon:
Bacon slices
Magic Swamp Dust (Spicy or Original)

Lay slices of uncooked bacon on a baking pan. Season lightly with Magic Swamp Dust. Bake at 350 until crispy. You'll have to keep an eye on it - ovens vary widely on this! When it's done to your liking, drain on paper towels.


Toasted split rolls, Basil Mayo, Lettuce, Fried Tomatoes, Bacon, and Gator Pickles if you're feeling spicy!
