NOTE: If you are using regular Gator Pickles that are cut up and not the premade relish, you'll need to add a little extra Magic Swamp Dust.
Blend together in a food processor. Keep cold until ready to serve.
Crispy chicken sausage patties
1 lb chicken thigh meat, diced
1 green onion, sliced
2 tbs Magic Swamp Dust
1/4 cup plain panko bread crumbs
Mix everything together in a bowl. Heat a cast iron skillet over medium high heat. Add a little grease (bacon grease is best but butter or olive oil or even cooking spray will work fine). Portion out patties at about 1 heaping tablespoon of meat mixture, into the hot skillet. Press them down a bit when you put them in the skillet. Let cook until browned nicely on each side and cooked through, 2 to 3 minutes per side. Serve hot with Gator Pickle relish sauce.
