In a pot of salted water, boil the artichokes until they start to get tender, about 20 minutes. Strain and let cool. Cut the artichokes in half, brush with olive oil, and sprinkle with cajun seasoning. Grill over medium heat for about 5 minutes, turning once. Serve with melted butter and/or dipping sauces like chipotle mayo or ranch.
