Holiday Dirty Rice
2 tbs olive oil
1 1/2 lbs lean ground beef
1 cup chopped creole veggies
cajun seasoning to taste
1 can cream of mushroom
2 cans beef gravy
3-4 cups cooked rice

Brown meat in oil. Drain excess grease if necessary. Add creole veggies and cajun seasoning. Cook over medium heat until wilted. Add cans of soup and gravy. Cook over medium high heat until mixture really gets bubbling. Carefully taste for seasoning. Add cooked rice to taste. The more you add, the "drier" your dirty rice will be.
