Pralines
Easy Pecan Pralines

This is a family-size recipe. It can be halved for those who just want a taste.

2 cups light brown sugar
2 cups granulated sugar
1 cup evaporated milk
5 tbs butter or margarine
1 tsp vanilla extract
2 cups pecan halves

you will also need a candy thermometer and wax paper

Place all sugar and evaporated milk in a big, heavy saucepan and bring to a boil over medium to med-high heat, stirring constantly. When the temperature reaches 228 degrees on a candy thermometer, stir in the butter and pecans. Keep stirring and continue cooking until mixture reaches 236 degrees. Remove from heat, stir in vanilla and then let stand 2 minutes. Then, beat the mixture with a wooden spoon until the sugar coats the pecans but does not lose its gloss.  Drop the pralines a tablespoon at a time onto wax paper. Allow to cool. They should set in just a few minutes.

Store in an airtight container at room temperature if you have any left.
