Salsa
This has got to be the best salsa I've ever had! It's so easy, you've got to try it!
The fresher the ingredients, the better the outcome.
2 large tomatoes or 3-4 good sized Roma tomatoes
2 small cans tomato sauce
1/2 lime (juice only)
1 tbs Cajun Seasoning
1 clove garlic, roughly chopped
1/2 medium onion, roughly chopped
1 large jalapeno, roughly chopped (removing seeds takes a little heat out)
1-2 tbs fresh cilantro
2 tbs ketchup
Heat oven to 400 degrees. Spray the tomatoes with nonstick spray in a small pan and roast just until the skins split. (About 8 minutes.) Remove tomatoes from oven and set aside.
In a blender or food processor, put tomato sauce, lime juice, seasoning and garlic. Blend well. Add roasted tomatoes and pulse a few times. Add chopped onion, jalapeno, cilantro and ketchup. Pulse just until it combines. The less you blend, the chunkier the salsa. If you like it smooth, blend longer. Pour into a bowl. Sprinkle with a just a little salt and pepper. Stir. Cover and refrigerate until ready to serve. (When you serve it, the liquid will separate a little at room temperature. Just keep it stirred. Your guest will eat it so fast, you'll probably never notice!)
