Black Bean Salsa
BEST PARTY DISH EVER!
2 cans black beans, rinsed and drained
1 can corn, rinsed and drained
1/2 medium sweet onion, diced
2 medium sized tomatoes, diced (homegrown if available)
2 jalapeno peppers, diced
1 large lime
1 bunch cilantro
2 tbs italian dressing
spicy seasoning blend (optional)
After rinsing and draining the beans and corn in a colander, add them to a bowl. Then, just add the onion, tomatoes, and peppers. Cut the lime in half and squeeze over the mixture. Rough chop some of the cilantro and stir in to mixture. Pour the italian dressing and mix well. Refrigerate until ready to serve. Great as a topping for fish or chicken, or served by itself with tortilla chips.
