This is super easy!
1 box white cake mix (plus ingredients on box)
1 can cream cheese frosting
Juice of 6-8 satsumas
Follow instructions on white cake mix box. Substitute satsuma juice for the same amount of water (or milk) in the cake recipe. Pour batter into greased/floured muffin cups and bake according to directions.
Stir 2-3 tablespoons satsuma juice into frosting. Frost cupcakes after cooling.
(And yes -- you can make a regular two-layer cake or even bars from this recipe -- cupcakes just seem easier...)
Makes 24 cupcakes.
