White Beans
This is Kevin Boudreaux's recipe for cooking white beans from scratch.
1 pound dried white beans
1/2 pound salt pork
1 onion, chopped
1 tbs chopped fresh parsley
1/4 cup green onion
2-3 tbs salt (to taste)
Boil beans (without seasoning) in enough water to cover for at least one hour. Drain beans. Add beans back to pot and add all other ingredients. Return to a boil and let cook for a few minutes before lowering heat to a good simmer. Cover and cook until beans are tender, at least 2 hours, stirring occasionally.
Serve over white rice.
