2 bricks cream cheese, softened (1/3 less fat is okay, don't use fat free)
2 cups shredded mozzarella
1 cup grated parmesan
no-boil lasagna noodles
1 lb ground beef
1 jar spaghetti sauce
1 shallot, chopped
Preheat oven to 350. Brown ground beef and drain. Add meat back to skillet and add shallots and a little cajun seasoning. Cook for one minute over medium heat, then add sauce. Lower heat and let simmer while you get the cheese prepared.
Beat cream cheese with eggs, 1 cup mozzarella and 1/2 cup parmesan. Add some chopped parsley. Get all ingredients incorporated.
In a 2-quart glass dish, layer meat sauce, noodles, then cheese mixture and 1/2 cup mozz. cheese and 1/4 cup parmesan. Add remaining meat sauce, noodles, cheese mixture and remaining cheeses.
Bake for about 1 hour. You may want to put an old cookie sheet under your pan to catch any run-over cheese.
Let cool slightly before serving.
