Tomato-blue cheese salad
This is a quickie and so very good. Go ahead - use the shortcut ingredients!
1 bag precut romaine lettuce
2 large creole tomatoes
1/2 cup crumbled blue cheese
1/2 cup olive oil vinaigrette
coarse salt and pepper
Layer lettuce onto a large plate. Slice tomatoes and arrange over lettuce. Sprinkle with salt and pepper, top with blue cheese and drizzle with dressing.
This goes great as a topping for Black-n-Blue burgers.
