JB's fish fry
Mr. JB doesn't give quantities on ingredients - adjust to your taste.

Fish fillets (any kind of white meat fish)
Lemon pepper
Cajun seasoning
Worcestershire sauce
Yellow mustard
Garlic powder
Hot sauce
fish fry or cornmeal
oil for frying

In a large bowl, combine fish with everything but cornmeal and oil. Coat fillets well and let fish marinate about 30 minutes. Heat the oil to 350 degrees in deep fryer.
When the oil is hot, take one fillet out of the marinade at a time and coat well fillet well with cornmeal. Add to oil. Do that with just enough fillets to fit in the fryer. Don't stack fillets or they will absorb too much grease.

Drain on paper towels or a brown paper bag. Squeeze a little lemon juice on top if you like. JB likes to add sliced onions to his.
