JB Grilled fish
Mr. JB doesn't use quantities in his recipes. Adjust seasonings to your taste.
Fish fillets or whole fish, completely dressed
Melted butter
Lemon pepper
Cajun seasoning
Yellow mustard
Lemon juice
Hot sauce
Worcestershire sauce
If whole fish are thick, make cuts down to the bone on the thick parts, about 2 inches apart. This allows fish to cook in the middle.
Combine butter, lemon pepper, seasoning, mustard, lemon juice, hot sauce and worcestershire sauce in a bowl. Place fish in a pan and pour the seasonings over them, turning repeatedly to coat both sides. Reserve some of the mixture for basting.
Heat your grill. If using charcoal, wait until the flame goes out and the coals turn white. Gas grill, heat to 350.
If you don't have a special grill pan for fish, place a piece of aluminum foil over the grill.
Cook the fish on the foil or in a the grill pan for about 10 minutes for fillets, a little longer for whole fish or fish on the half shell (15 -18 minutes).
Baste twice while cooking.
Fish is done when white all the way to the bone, or fillets begin to flake.
