BlacknBlue Tuna
For 1-2 servings:
1 tbs butter
1 fresh tuna steak (or a couple of nice chicken breasts)
cajun blackening seasoning (see note)
1/2 cup blue cheese
2 tbs butter
1 tbs garlic
2 tbs grated parmesan cheese
1 tsp dried parsley
2 - 3 cups cooked linguine, drained
Preheat oven to 400. In a skillet, heat butter over med-high heat. Season tuna (or chicken) well with blackening seasoning, sear in hot butter. When well seared, top with blue cheese and put skillet in oven to finish cooking.
DO NOT PUT A RUBBER OR PLASTIC HANDLE-SKILLET IN A HOT OVEN. METAL ONLY, OR USE A BROILER PAN.
In a separate skillet, saute garlic in 2 tbs butter. Add cheese, parsley and pasta and toss to incorporate. When tuna is medium rare (or chicken is cooked through) and blue cheese is melted, serve on top of pasta.
