Candied Yams
This is Mary Purpera's recipe. Adjust quantities to taste.
4 large yams
2 cups sugar
1/2 cup water
1/2 stick butter
1 tsp cinnamon
Boil yams whole in a large pot. Drain well. Peel and slice.
Boil sugar and water to make a simple syrup. This process takes about 10 minutes.
Layer yam slices into a large Pyrex dish. Pour syrup over yams, add butter in slices and top with cinnamon. Bake at 300 degrees for about 30 minutes until bubbly.
