When you come home with an ice chest full of wahoo steaks (like we did when we went fishing with Capt. Chris Moran of Cajun Made Charters), this is the best way to cook them.
Marinate steaks (with skin on) in your favorite thick marinade for several hours. (We used Cajun Butter Injectible Marinade). Heat your grill to medium high and place wahoo steaks on grill. Cook until medium-well and fish begins to flake easily with a fork. Remove skin before eating (the skin retains that fishy smell and taste.)
