Ed's Cobia Marinade
This marinade is used as a baste for grilled cobia. It comes from Ed Beard of Ed's Shenandoah Hardware (The Grill Store).
Marinade:
3/4 cup wine (or beer - your preference)
2 tbs worcestershire sauce
2 tsp concentrated liquid crab boil
1 tbs Louisiana Hot Sauce (or to taste)
1 tbs cajun seasoning
1/2 tbs garlic powder
1/2 tbs onion powder
Spray grill with nonstick spray before lighting. Heat to about 300 degrees. Add cleaned chunks of lemonfish (with fat and bloodline removed). Baste the fish with marinade as it grills over low/medium heat. Baste and cook covered for 5 minutes. Then flip the fish and baste other side, then close the lid and cook another 5 minutes. Remove with spatula and serve with Ed's veggie topping.
