Grilled Aoudad
What's an aoudad? It's a Barbary sheep, but it tastes like antelope. Does that help? You can hunt these critters on exotic ranches in Texas, and they are delicious when grilled. Just don't overcook it!
2 lbs aoudad steaks/chops
1 can beer
Magic Swamp Dust
optional marinade ingredients: Italian dressing, worcestershire sauce
portobello mushrooms, sliced thick
melted butter
steak sauce
In a ziptop bag, combine the beer, up to 1/4 cup Magic Swamp Dust (original or spicy Fire Dept. Blend), and any optional ingredients. Add the meat and let marinate up to 24 hours, at least overnight.
Heat a grill or grill pan to medium high. Remove meat from marinade, place on hot grill with the portobello mushrooms. Cook everything 2-3 minutes per side, or until meat is medium rare. Brush everything with a little melted butter and sprinkle with more Magic Swamp Dust while cooking.
Serve with steak sauce.
