Rush Crushed Catfish
catfish fillets
all-purpose flour
cornmeal
cajun seasoning
buttermilk
Zapp's Cajun Crawtators potato chips, crushed
oil for frying

Combine equal parts flour and cornmeal, season with cajun seasoning. Dredge catfish into flour/cornmeal, then dip into buttermilk. Roll into crushed potato chips. Fry at medium high heat for 2 minutes. Remove fish from oil, drain then remove to an ovenproof dish and bake at 375 for about 5 more minutes, until fish is cooked through. (Cooking time depends on thickness of fillet.)
