Tropical Salsa
1 small can crushed pineapple
2-3 thick slices red onion
1/2 red bell pepper
olive oil
salt & pepper
minced ginger
1-2 limes, juiced
1 jalapeno, chopped
2-3 tablespoons chopped fresh cilantro

Rub onions and bell peppers with olive oil on both sides grill over medium high heat for 3-4 minutes each side. Season with salt and pepper while cooking.

In a bowl, add pineapple with juice, ginger, lime juice, jalapeno, cilantro. Chop onions and bell pepper, add to mixture.  Stir well. Use as topping for grilled fish, chicken or pork.
