Parmesan Crusted Redfish
Redfish fillets (or tilapia, catfish or other "white" fish)
lemon juice
cajun seasoning
Italian seasoned bread crumbs
Shredded Parmesan cheese
Olive oil (herb-infused = optional)

Squeeze lemon juice over redfish fillets. Season fish well with cajun seasoning. Combine cheese and bread crumbs into a shallow dish. Dredge fish well in crumbs, adding crumbs over the top of the fish and pressing well to adhere as much coating as possible to the fish. Add 1-2 tbs olive oil to a cast iron broiler pan, place fish in pan and cook about 10 minutes at 400 degrees until fish is cooked through.

If you're cooking outdoors, use the same method to prepare fish, then cook in a gas grill with the top down at a steady 400 degrees for 10 minutes

Drizzle a little olive oil over the top to serve.
A great side dish would be sliced creole tomatoes from Venice with just a pinch of salt & pepper.
