Caribbean Jerk Grouper
2 tbs jerk seasoning (recipe follows)
2-4 grouper fillets
1/2 cup olive oil
1 tbs minced garlic
1/2 cup brown sugar
1 cup low-sodium soy sauce
1/2 cup orange juice

Mix all ingredients and marinate fish for 2 hours. Preheat a skillet over med-high heat. Remove fish from marinade and cook 4-5 minutes, turning fillets after each minute. Sprinkle each side with a little more jerk seasoning.

Jerk seasoning:
2 tbs onion powder
2 tsp ground thyme
1 tsp allspice
1/4 tsp cinnamon
1 tsp black pepper
1 tsp cayenne
1 1/2 tsp salt
1/4 tsp nutmeg
2 tsp sugar
