1-2 grouper fillets
4 tbs olive oil
2 mirlitons, peeled and diced (option: eggplant)
1/2 cup chopped creole veggies (onion, bell pepper, celery, garlic)
1 can diced tomatoes
1 can chicken broth
Season fish with cajun seasoning. Heat a large skillet over medium high heat. Add olive oil. Sear fish on each side 2 minutes. Remove from pan and keep warm. Add mirlitons, creole veggies and cook for 3-4 minutes. Add tomatoes and herbs. Season with a pinch of cajun seasoning. Saute 2 minutes. Add 3/4 can of broth and boil for 2 minutes. Lower heat to a simmer and add fish back to pan. Cook until fish is done (3-4 minutes), basting with juices. Serve over rice.
