** To keep everything nice and hot, you may want to start on the crab sauce recipe, get it simmering, then get your shrimp toast going. That way, they will both be ready at the same time.
Shrimp Toast ingredients:
1 lb shrimp
1 tbs minced garlic
2 tbs Italian dressing
2 tsp cajun seasoning
2 tbs chopped green onions
1 tbs chopped parsley
1 tbs worcestershire sauce
1/2 loaf texas toast sandwich bread
Put shrimp in a food processor and chop until you create a paste. Mix seasonings into shrimp. Cut bread slices diagonally and spread a thin layer of paste on each piece. Deep fry in oil, shrimp side down first, until browned on that side (depending on heat of oil - 30 secs to 1 minute). Then turn all pieces and cook on bread side for an additional 30 seconds. Serve with creamy crab sauce (recipe below).
Creamy Crab Sauce
1/2 stick butter or margarine
1/2 tbs minced garlic
1/2 cup minced onions
1/2 cup Cream of Celery condensed soup
1/2 cup Cheddar Cheese condensed soup
1/2 cup lump crab meat
1 cup heavy cream (or half and half)
Saute onions and garlic in butter. Add both soups and stir well. Fold in crab meat. Drizzle in cream while whisking (to avoid cream curdling). Whisk until well blended. Reduce heat to low and simmer for 20 minutes. Pour generously over toast.
