Jalapeno Cheeseburgers
This is Sue McDonald's adapted version of a recipe she saw in Bon Appetit.
Burgers:
2 pounds lean ground beef
1 cup finely chopped onion
1/4 cup chopped parsley
2 tbs worcestershire sauce
1 tbs minced jalapeno pepper, seeded
cajun seasoning to taste
option: a little minced garlic

NOTE: You will also need one onion, sliced in thick rings for grilling, cooked bacon strips and sliced cheese (like Monterey Jack)

Gently mix all ingredients in a bowl, using your hands to blend. Form mixture into patties. Cover and chill for 2 hours or up to 1 day. Prepare grill with non-stick spray or rub with oil. Light the grill and cook burgers over medium heat. Add the large onion slices to the grill.  When they're almost done, brush them with the glaze (see recipe below). When burgers are cooked through, turn off the heat and add the cheese slices. When cheese is just starting to melt, remove burgers from the grill and serve on buns with the spicy ranch sauce (see below), grilled onions, bacon and whatever you like. (We liked sliced avocado, lettuce and tomato on these!)

Glaze:
1/3 cup light corn syrup
2 tbs worcestershire sauce
2 tbs ketchup
1 tsp instant coffee crystals
2 tsps light brown sugar
3 tbs butter

Stir first 5 ingredients in small saucepan over medium heat until coffee is dissolved. Remove from heat. Whisk in butter.

Ranch Sauce:
1 cup light mayo
1 cup light sour cream
1/4 cup chopped cilantro
6 tbs fresh lime juice
4 green onions, sliced
2 tbs minced jalapeno pepper, seeded
cayenne pepper or hot sauce to taste

Blend all ingredients in a bowl. Keep refrigerated until ready to use.
