Jalapeno rice
This is Kevin Boudreaux's recipe:

1 cup uncooked white rice
12 oz can chicken broth
1 medium onion, chopped
1 small can mushrooms, chopped with juice
1/3 cup diced pickled jalapenos (Trappey's) with juice
1 stick butter

Add all ingredients to ricepot and cook until fluffy. Goes great with stuffed flounder.
