Jimmy's Spicy Baked Chicken
Jimmy uses his seasonings and his friend Bucky's BBQ sauce for this recipe. Find Smokin' Fryin' Rub in stores and at www.CreativeCajunCooking.com. Until we get Bucky's sauce in stores, you'll just have to use your favorite.
Chicken leg quarters
sprinkle a little Smokin' Fryin' Rub on each (be careful, it's spicy)
cover each with Magic Swamp Dust
Bake at 350 until chicken is 160 degrees internal temp. Baste with BBQ sauce.
Bake for another 5 minutes. Brush another coat of BBQ sauce on top. Serve hot.
