Lemon Ice Box Pie
This is a low-fat, low sugar version that is so easy (and you can't tell you didn't use the full-fat ingredients!)

(Note: For testing purposes, I used Country Time Lite Lemonade with 1/2 sugar. This amount makes it nice and tangy - if you want a more subtle lemon flavor, use a little less. I also used Blue Bunny fat free, no sugar added vanilla ice cream and Fat Free Cool Whip.)

1/3 cup lemonade drink mix
1/2 cup water
2 cups softened vanilla ice cream
4 oz whipped topping
ready made graham cracker pie crust

In a large bowl, stir together drink mix and water. Using a hand mixer, blend in ice cream and whipped topping. Pour into pie crust. Place on a flat surface in the freezer and let freeze for at least 4 hours. To serve, remove from freezer 10 to 15 minutes before serving. Great with sliced strawberries.
