Oven Fried Rings
Much lighter than deep-frying and still crunchy!

1 large Vidalia onion, sliced in rings
3 eggs
1/2 cup LeMoine's Fry-Um-Up (or seasoned flour)
2-3 cups panko bread crumbs (can be homemade with stale French bread)
cajun seasoning to taste
cooking spray

Preheat oven to 450. Cover a baking pan with aluminum foil and spray lightly with cooking spray.

In a large bowl, beat the eggs lightly, adding a little water (up to 1/4 cup). Stir in Fry-Um-Up or flour to the eggs to make an egg batter. Add seasoning to plain breadcrumbs. Pass the rings through the egg batter, then toss in breadcrumbs.

Lay the breaded rings on the baking pan in a single layer, with no sides touching. Spray lightly with cooking spray.

Bake for 5 minutes, then rotate pan in oven. Bake another 5 minutes, then flip the rings and spray lightly with cooking spray. Bake another 5 - 10 minutes or until golden brown. KEEP AN EYE ON THEM. THEY CAN BURN EASILY AT THE END OF COOKING TIME.
